-They are an independent retailer. One location or just a couple.
-No franchises or big corporate suit-type guys.
-They have an established reputation.
-Suggested types of businesses:

-bars
-taverns
-brew pubs
-diners
-pancake houses
-tattoo parlors
-bowling alleys
-car washes
-coffee houses
-cupcake joints  
-blues bars
-bike shops
-bait and tackle shops

In addition, an awesome logo is always great! You probably will not find these treasures in strip malls or the like. They are typically free standing or street type locations.
